Gluten Free Shrimp Tacos [Recipe & Video]

Lindsey (@TheGlutenFreeTravelers) and Jodi (@glutenfreejodi) are not new to eating gluten free. We are both diagnosed Celiacs and must eat gluten free. We are strict about our gluten free diets (out of necessity), but we don’t let our food restrictions hold us back. We love traveling and have learned to say “gluten free” in many different languages (senza glutine, sin gluten, sans gluten, etc.). We also love cooking and are always coming up with fun ways to re-invent the meals we enjoy most – whether that means adapting to gluten free or just putting a healthy twist on a classic!

[RECIPE] Gluten Free Shrimp Tacos – featuring Cauliflower “Rice” & Beans

Ingredients:

· 1 package fresh 365 riced cauliflower

· Olive Oil

· 1 clove garlic, minced

· 1/2 teaspoon chili powder

· Salt

· Pepper

· 1/2 lb. medium peeled cooked shrimp (buy frozen and defrost in cold water for 1 hour prior to cooking)

· 1 can of black beans

· 1 package Siete corn tortillas

· 1 package of pico de gallo

· 2 ripe avocados, diced

· 3 tablespoons cilantro

· 2 limes, sliced into wedges

 

Instructions:

Step 1: Cook cauliflower rice on medium heat with olive oil, salt, pepper and garlic. Set aside. (We recommend a large non-stick pan for this – cook until you’ve reached your desired level of crunch).

Step 2: Add drained beans to cauliflower rice. Mash with fork and mix with cauliflower. Add chili powder to taste.

Step 3: Sauté shrimp on medium heat with olive oil & chili powder. Cook until slightly browned. Set aside.

Step 4: Warm tortillas and fill with your ingredients. We recommend heating tortillas 15 seconds on medium-high heat stovetop.

Step 5: Garnish with avocado, pico de gallo and cilantro. Lastly, add a squeeze of lime and enjoy!
